👩🍳 How to make Cluster Beans Curry
- Chop cluster beans into 2cm pieces, discarding tough tips.
- Heat oil (20ml) in heavy kadai over medium heat (160°C).
- Add mustard seeds; crackle 30 sec.
- Add cumin seeds, asafoetida, curry leaves, green chillies; fry 1 min.
- Add ginger; fry 1 min until fragrant.
- Add chopped onion; sauté 3 min until light golden.
- Add cluster beans; stir well to coat with oil for 2 min.
- Add turmeric, red chilli, coriander, salt (5g), sugar; mix thoroughly.
- Cover kadai; cook on medium heat (150°C) for 18-20 min, stirring every 5 min.
- Beans should become tender, slightly darker, well-flavored.
- Add lemon juice; stir well.
- Serve hot with rice or rotli. Beans should be tender, flavors well-combined.
