  1. Mix rice flour, besan, sesame seeds, ajwain, red chilli, turmeric, asafoetida, salt in bowl.
  2. Add 30ml oil gradually while mixing.
  3. Add warm water slowly; knead into soft, pliable dough.
  4. Heat oil in deep wok to 175°C (test: small piece sizzles immediately).
  5. Fill chakli maker (spiral piping device) with dough.
  6. Hold maker 2-3 inches above hot oil.
  7. Press dough in spiral motion directly into oil to form coil shape (3-inch diameter).
  8. Fry 1-2 min on medium heat (170°C) until light golden.
  9. Flip carefully; fry other side 1 min until golden and crispy.
  10. Remove with slotted spoon; drain on paper.
  11. Cool completely; store in airtight container.
  12. Serve as snack. Should be crispy, spiral-shaped, aromatic.
