👩🍳 How to make Bottle Gourd Curry
- Peel bottle gourd; remove spongy center. Cut into 2cm cubes.
- Heat oil (20ml) in large kadai over medium heat (160°C).
- Add mustard seeds; crackle 30 sec.
- Add cumin seeds, asafoetida, curry leaves, green chillies; fry 1 min.
- Add ginger; fry 1 min until fragrant.
- Add bottle gourd cubes; stir well to coat with oil for 2 min.
- Add turmeric, red chilli, coriander, salt (5g), sugar; mix thoroughly.
- Cover kadai; cook on medium heat (150°C) for 20-25 min, stirring every 5 min.
- Bottle gourd should become very soft, slightly translucent, edges light golden.
- Add lemon juice; stir well.
- Serve hot. Lauki should be creamy, melt-in-mouth soft.
