👩‍🍳 How to make Bitter Gourd Curry

  1. Wash bitter gourd; cut into thin 3mm slices lengthwise, removing seeds.
  2. Soak slices in salt water (½ tsp salt in 200ml water) for 10 min. Drain well.
  3. Heat oil (25ml) in large wok over medium-high heat (180°C).
  4. Add mustard seeds; crackle 30 sec.
  5. Add cumin seeds, asafoetida, green chillies; fry 1 min.
  6. Add bitter gourd slices; stir-fry on high heat (180°C) for 5-6 min.
  7. Add turmeric, red chilli, coriander, salt (5g), sugar; mix well.
  8. Continue cooking on medium heat (160°C) for 10-12 min, stirring occasionally.
  9. Bitter gourd should become crispy at edges, tender, golden brown.
  10. Sprinkle sesame seeds; add lemon juice.
  11. Serve hot. Should have crispy edges, tender centers, balanced bitter-spicy taste.
