👩🍳 How to make Bitter Gourd Curry
- Wash bitter gourd; cut into thin 3mm slices lengthwise, removing seeds.
- Soak slices in salt water (½ tsp salt in 200ml water) for 10 min. Drain well.
- Heat oil (25ml) in large wok over medium-high heat (180°C).
- Add mustard seeds; crackle 30 sec.
- Add cumin seeds, asafoetida, green chillies; fry 1 min.
- Add bitter gourd slices; stir-fry on high heat (180°C) for 5-6 min.
- Add turmeric, red chilli, coriander, salt (5g), sugar; mix well.
- Continue cooking on medium heat (160°C) for 10-12 min, stirring occasionally.
- Bitter gourd should become crispy at edges, tender, golden brown.
- Sprinkle sesame seeds; add lemon juice.
- Serve hot. Should have crispy edges, tender centers, balanced bitter-spicy taste.
