👩‍🍳 How to make Besan Burfi

  1. Heat 100ml ghee on low heat (30 seconds).
  2. Add besan gradually, stirring constantly to avoid lumps.
  3. Roast on low heat for 10-12 minutes, stirring frequently.
  4. Besan should turn light golden and release nutty aroma.
  5. When tilted, besan should flow like sand.
  6. Add remaining ghee (100ml) gradually. Stir well.
  7. Add sugar. Mix on medium heat for 2 minutes until sugar dissolves.
  8. Add milk powder. Stir for 1 minute.
  9. Reduce heat to low. Cook 8-10 minutes, stirring constantly.
  10. Mixture should become thick, glossy, and leave a trail when stirred.
  11. Add cardamom, almonds, and cashew. Mix well.
  12. Transfer to greased tray. Smooth with buttered spatula.
  13. Cool 10 minutes. Cut into squares.
