👩🍳 How to make Besan Burfi
- Heat 100ml ghee on low heat (30 seconds).
- Add besan gradually, stirring constantly to avoid lumps.
- Roast on low heat for 10-12 minutes, stirring frequently.
- Besan should turn light golden and release nutty aroma.
- When tilted, besan should flow like sand.
- Add remaining ghee (100ml) gradually. Stir well.
- Add sugar. Mix on medium heat for 2 minutes until sugar dissolves.
- Add milk powder. Stir for 1 minute.
- Reduce heat to low. Cook 8-10 minutes, stirring constantly.
- Mixture should become thick, glossy, and leave a trail when stirred.
- Add cardamom, almonds, and cashew. Mix well.
- Transfer to greased tray. Smooth with buttered spatula.
- Cool 10 minutes. Cut into squares.
