👩‍🍳 How to make Bell Pepper Curry

  1. Wash bell peppers; remove seeds. Chop into 2cm pieces.
  2. Heat oil (20ml) in large wok over medium heat (160°C).
  3. Add mustard seeds; crackle 30 sec.
  4. Add cumin seeds, asafoetida, green chillies; fry 1 min.
  5. Add ginger; fry 1 min.
  6. Add chopped onion; sauté 2 min until soft.
  7. Add bell pepper pieces; stir-fry on medium-high heat (170°C) for 6-8 min.
  8. Add turmeric, red chilli, coriander, salt (4g), sugar; mix well.
  9. Cook on medium heat (150°C) for 4-5 min more.
  10. Peppers should be tender-crisp, retaining color.
  11. Add lemon juice; garnish with coriander leaves.
  12. Serve hot. Peppers should be bright, tender, aromatic.
