👩🍳 How to make Bell Pepper Curry
- Wash bell peppers; remove seeds. Chop into 2cm pieces.
- Heat oil (20ml) in large wok over medium heat (160°C).
- Add mustard seeds; crackle 30 sec.
- Add cumin seeds, asafoetida, green chillies; fry 1 min.
- Add ginger; fry 1 min.
- Add chopped onion; sauté 2 min until soft.
- Add bell pepper pieces; stir-fry on medium-high heat (170°C) for 6-8 min.
- Add turmeric, red chilli, coriander, salt (4g), sugar; mix well.
- Cook on medium heat (150°C) for 4-5 min more.
- Peppers should be tender-crisp, retaining color.
- Add lemon juice; garnish with coriander leaves.
- Serve hot. Peppers should be bright, tender, aromatic.
