👩‍🍳 How to make Sheera

  1. Toast rava (5 mins, low heat): Melt 2 tbsp ghee, add rava. Stir continuously until golden brown with nutty, toasty aroma — rava grains should be separate and slightly puffed.
  2. Fry dry fruits (2 mins, low heat): In separate small pan, heat remaining ghee, fry cashews until golden. Add raisins until puffed. Reserve.
  3. Add milk (8 mins, medium-low heat): Pour warm milk into rava — it will hiss and steam. Stir immediately and vigorously. Cook until rava absorbs milk and mixture thickens.
  4. Sweeten (3 mins, low heat): Add sugar, saffron milk, cardamom. Stir until sugar dissolves and sheera has a thick, glossy, porridge-like consistency.
  5. Garnish: Top with fried cashews and raisins. Serve warm.

📖 Cultural notes

Sheera is the Goan comfort breakfast, made on festival mornings and served as naivedyam (offering) at Hindu temples across Goa before being distributed to devotees. ---
