  1. Soak sabudana (4 hrs, no heat): Rinse sabudana, drain, sprinkle 3 tbsp water. Mix, cover, rest 3–4 hours until pearls are soft and no hard core when pressed.
  2. Season (2 mins, no heat): Mix soaked sabudana with crushed peanuts, salt, lemon juice.
  3. Finish (2 mins, off heat): Fold in grated coconut. Garnish with coriander. Serve immediately.
