  1. Make puri dough (10 mins, no heat): Mix flour, salt, and 1 tsp oil. Add water gradually and knead into stiff dough. Cover and rest 15 mins.
  2. Roll puris (10 mins, no heat): Divide dough into 16 balls. Roll each into thin 3-inch rounds.
  3. Deep fry (1 min each, high heat): Heat oil until shimmering (180°C). Slide puri gently — it will puff up within seconds. Press lightly with slotted spoon, flip, fry 20 more seconds until golden. Drain on paper.
