👩🍳 How to make Poi
- Activate yeast (5 mins, no heat): Dissolve sugar in warm water (40°C), sprinkle yeast, let stand until frothy and bubbly.
- Make dough (8 mins, no heat): Combine both flours and salt in a bowl. Add yeast mixture and oil, knead into a soft, elastic dough — it should spring back when poked.
- First rise (45 mins, no heat): Cover with damp cloth, rest in warm spot until doubled in size.
- Shape (5 mins, no heat): Punch down dough, divide into 8 equal balls, flatten slightly into oval shapes about 1cm thick.
- Second rise (20 mins, no heat): Place on greased tray, cover, let rise again until puffed.
- Bake (15 mins, high heat 220°C): Bake until golden brown on top with hollow sound when tapped underneath.
