  1. Fry sausage (8 mins, medium heat): Slit skin. Fry in dry heavy pan, rendering all spiced pork fat. Press down. Brown deeply.
  2. Add onion and chilli (3 mins, medium heat): Add sliced onion and chilli to sausage fat. Fry until soft.
  3. Stuff pao: Slice pao, stuff with sausage and onion mixture. Drizzle pan juices inside.
