  1. Tempering (3 mins, medium heat): Heat coconut oil in wide pan. Add mustard seeds — let pop. Add urad dal, fry until golden. Add dry red chillies, curry leaves — fry 1 min.
  2. Add coconut (3 mins, low heat): Add grated coconut to tempering. Sauté 2–3 mins until coconut is fragrant and lightly toasted but not browned.
  3. Combine (3 mins, low heat): Add cooked rice, salt. Toss gently using two forks to keep rice fluffy and evenly coated. Heat through 2 mins.
