👩🍳 How to make Goan Vindaloo Breakfast
- Reheat vindaloo (8 mins, low heat): Place vindaloo in heavy pan. Heat slowly on low — the spices intensify overnight and the pork becomes even more tender. Stir gently. Add 2–3 tbsp water to loosen if needed. Vindaloo should be thick, deep red, and aromatic.
- Fry rice (4 mins, medium heat): In separate pan, heat coconut oil and fry rice until grains separate and lightly crisped on edges. Or toast poi slices in pan until warm.
- Serve: Mound rice on plate, spoon hot vindaloo on top. Garnish with raw onion and coriander.
