👩‍🍳 How to make Goan Vindaloo Breakfast

  1. Reheat vindaloo (8 mins, low heat): Place vindaloo in heavy pan. Heat slowly on low — the spices intensify overnight and the pork becomes even more tender. Stir gently. Add 2–3 tbsp water to loosen if needed. Vindaloo should be thick, deep red, and aromatic.
  2. Fry rice (4 mins, medium heat): In separate pan, heat coconut oil and fry rice until grains separate and lightly crisped on edges. Or toast poi slices in pan until warm.
  3. Serve: Mound rice on plate, spoon hot vindaloo on top. Garnish with raw onion and coriander.
