👩‍🍳 How to make Goan Upma

  1. Dry roast rava (4 mins, low heat): Stir rava constantly until it turns light golden and nutty aroma fills the pan. Transfer to plate.
  2. Tempering (2 mins, medium heat): Heat coconut oil, add mustard seeds. When they pop, add urad dal — fry until light golden. Add cashews, curry leaves, green chillies, onions. Sauté until onions are translucent.
  3. Add water (2 mins, high heat): Pour hot water, add salt. Bring to a rolling boil.
  4. Add rava (8 mins, low heat): Slowly pour roasted rava while stirring continuously to prevent lumps. Keep stirring until all water is absorbed and upma pulls away from sides.
  5. Finish (2 mins, off heat): Fold in fresh coconut. Cover and rest 2 mins. Garnish with coriander.
