- Heat oil in pan over medium flame
- Add cumin seeds, let pop (15 seconds)
- Add ginger, garlic, cook 1 min
- Add onion, sauté 3-4 min until soft
- Add tomato, cook 2 min
- Sprinkle chilli powder, turmeric, coriander powder, black pepper
- Stir well, cook 1 min
- Add tendli pieces, mix well (2 min)
- Pour in water, curry leaves, salt
- Cover, simmer 12-15 min until tendli is tender but not mushy
- Stir in coconut milk slowly (2 min)
- Cook uncovered 5-8 min until sauce thickens
- Add grated coconut if using
