👩‍🍳 How to make Goan Squid Masala

  1. Heat 3.5 tbsp oil in wide pan over medium flame
  2. Add cumin seeds, let them pop (15-20 seconds)
  3. Add ginger, garlic, cook 1 min until fragrant
  4. Add onions, sauté 5 min until translucent
  5. Add tomatoes, cook 3-4 min until soft
  6. Sprinkle Kashmiri chilli powder, coriander powder, turmeric, black pepper
  7. Stir well, cook 2 min until spices bloom
  8. Pour in water, bring to simmer (2 min)
  9. Add curry leaves, green chillies
  10. Gently add squid rings, stir carefully (do not break/shred)
  11. Cook 8-10 min on medium heat until squid becomes tender (squid cooks quickly — watch carefully)
  12. Slowly pour coconut milk while stirring (2-3 min)
  13. Simmer 5-8 min until sauce thickens and coats squid
  14. Squeeze lemon juice, adjust salt
  15. Cook final 2 min
  16. Sprinkle cilantro
