👩🍳 How to make Goan Squid Masala
- Heat 3.5 tbsp oil in wide pan over medium flame
- Add cumin seeds, let them pop (15-20 seconds)
- Add ginger, garlic, cook 1 min until fragrant
- Add onions, sauté 5 min until translucent
- Add tomatoes, cook 3-4 min until soft
- Sprinkle Kashmiri chilli powder, coriander powder, turmeric, black pepper
- Stir well, cook 2 min until spices bloom
- Pour in water, bring to simmer (2 min)
- Add curry leaves, green chillies
- Gently add squid rings, stir carefully (do not break/shred)
- Cook 8-10 min on medium heat until squid becomes tender (squid cooks quickly — watch carefully)
- Slowly pour coconut milk while stirring (2-3 min)
- Simmer 5-8 min until sauce thickens and coats squid
- Squeeze lemon juice, adjust salt
- Cook final 2 min
- Sprinkle cilantro
