👩‍🍳 How to make Goan Sorak

  1. Soak dried chillies in warm water 15 min
  2. Dry toast cumin seeds and coriander seeds together (1-2 min)
  3. Grind toasted seeds with coconut, soaked chillies, garlic, black peppercorns, and 100ml water to smooth paste
  4. Heat oil in pan over medium flame
  5. Sauté onion 3-4 min until translucent
  6. Add tomato, cook 2 min
  7. Pour in ground coconut masala, cook 4-5 min until oil separates
  8. Stir in turmeric powder
  9. Pour in water, bring to simmer
  10. Add tamarind concentrate, salt, curry leaves
  11. Simmer 10-12 min uncovered until flavors meld and sauce reduces slightly
  12. Adjust salt and tamarind (should be balanced: sour, spicy, coconutty)
