👩‍🍳 How to make Goan Shark Ambot Tik

  1. Heat oil in heavy-bottomed pan over medium flame
  2. Sauté onions 4-5 min until golden brown
  3. Add ginger, cook 1 min
  4. Add tomatoes, cook 3-4 min until soft and mushy
  5. Sprinkle Kashmiri chilli powder, coriander powder, cumin powder, turmeric, black pepper powder
  6. Stir well, cook 2-3 min until oil separates and spices are fragrant
  7. Pour in water, bring to gentle boil
  8. Add kokum pieces (or tamarind concentrate), stir
  9. Add curry leaves and green chillies
  10. Slide fish steaks carefully into simmering curry
  11. Cook gently 15-18 min until fish is opaque and flakes easily
  12. Add salt to taste
  13. Cook final 2-3 min uncovered for sauce to coat fish
  14. The dish should have deep sour-spicy flavor from kokum balance with spices
