👩🍳 How to make Goan Shark Ambot Tik
- Heat oil in heavy-bottomed pan over medium flame
- Sauté onions 4-5 min until golden brown
- Add ginger, cook 1 min
- Add tomatoes, cook 3-4 min until soft and mushy
- Sprinkle Kashmiri chilli powder, coriander powder, cumin powder, turmeric, black pepper powder
- Stir well, cook 2-3 min until oil separates and spices are fragrant
- Pour in water, bring to gentle boil
- Add kokum pieces (or tamarind concentrate), stir
- Add curry leaves and green chillies
- Slide fish steaks carefully into simmering curry
- Cook gently 15-18 min until fish is opaque and flakes easily
- Add salt to taste
- Cook final 2-3 min uncovered for sauce to coat fish
- The dish should have deep sour-spicy flavor from kokum balance with spices
