👩‍🍳 How to make Goan Shankarpali

  1. Combine flour, powdered sugar in bowl, mix well
  2. Add melted ghee, egg yolk, mix with fork until breadcrumb texture (2-3 min)
  3. Knead with hand to stiff dough (should be much stiffer than bread dough, like shortbread)
  4. Add poppy seeds, sesame seeds, cardamom powder, salt
  5. Knead 2 min more until seeds are evenly distributed
  6. Rest 10 min
  7. Roll dough between two parchment sheets into thin sheet (approximately 1/8-inch thick)
  8. Using pastry cutter or knife, cut into diamond or square shapes (approximately 2x2 inch)
  9. Heat oil to 170°C
  10. Fry in batches, 2-3 min per side until light golden brown
  11. Remove with slotted spoon, drain on paper towel
  12. Cool completely (becomes harder and more brittle)
  13. Store in airtight container, lasts 1-2 weeks
