👩🍳 How to make Goan Shankarpali
- Combine flour, powdered sugar in bowl, mix well
- Add melted ghee, egg yolk, mix with fork until breadcrumb texture (2-3 min)
- Knead with hand to stiff dough (should be much stiffer than bread dough, like shortbread)
- Add poppy seeds, sesame seeds, cardamom powder, salt
- Knead 2 min more until seeds are evenly distributed
- Rest 10 min
- Roll dough between two parchment sheets into thin sheet (approximately 1/8-inch thick)
- Using pastry cutter or knife, cut into diamond or square shapes (approximately 2x2 inch)
- Heat oil to 170°C
- Fry in batches, 2-3 min per side until light golden brown
- Remove with slotted spoon, drain on paper towel
- Cool completely (becomes harder and more brittle)
- Store in airtight container, lasts 1-2 weeks
