  1. Grind coconut masala (5 mins, no heat): Blend coconut, Kashmiri chillies, coriander, turmeric, cumin, garlic, and tamarind with water to fine smooth paste.
  2. Sauté onion (4 mins, medium heat): Heat coconut oil, fry onion until translucent.
  3. Add prawns (6 mins, medium heat): Add prawns and salt. Stir to coat. Pour ½ cup water, simmer until prawns curl and turn pink-orange throughout — do not overcook or they toughen.
  4. Serve: Ladle over hot steamed rice.
