- Grind coconut masala (5 mins, no heat): Blend coconut, Kashmiri chillies, coriander, turmeric, cumin, garlic, and tamarind with water to fine smooth paste.
- Sauté onion (4 mins, medium heat): Heat coconut oil, fry onion until translucent.
- Add prawns (6 mins, medium heat): Add prawns and salt. Stir to coat. Pour ½ cup water, simmer until prawns curl and turn pink-orange throughout — do not overcook or they toughen.
- Serve: Ladle over hot steamed rice.
