  1. Steam ponk (8 mins, high heat): Steam fresh sorghum kernels until just tender.
  2. Tempering (3 mins, medium heat): Heat coconut oil, mustard seeds, curry leaves, chillies.
  3. Combine (3 mins, medium heat): Add steamed ponk to tempering. Add turmeric, salt. Toss well.
  4. Serve: Finish with lemon juice and fresh coriander.
