- Rinse poha (3 mins, no heat): Place poha in colander, rinse under cold water for 30 seconds. Shake well — grains should be moist but not soggy or clumped. Season with salt.
- Fry potato (5 mins, medium heat): Heat oil, fry diced potato until golden and crisp on outside. Remove and set aside.
- Tempering (2 mins, medium heat): In same pan, add mustard seeds — let splutter. Add cumin, curry leaves, green chillies, onions. Sauté until onions are soft and translucent.
- Combine (5 mins, low heat): Add turmeric, then rinsed poha. Mix gently to coat without breaking. Add fried potato and peanuts. Stir 3 mins until everything is heated and fragrant.
- Finish (1 min, off heat): Add fresh coconut, lemon juice. Toss. Garnish with coriander.
