👩🍳 How to make Goan Mutton Sorpotel
- In salted water (2 tsp salt), parboil mutton meat and liver together 30-35 min until partially cooked
- Drain well, reserve 300ml cooking broth
- Dry-toast all spices individually (2 min each): Kashmiri chillies, Byadagi chillies, peppercorns, cinnamon, cloves, cumin, coriander
- Cool completely, grind all to coarse powder
- Soak tamarind in hot water 30 min, squeeze and strain (save liquid)
- Blend spice powder with garlic, ginger, and 100ml vinegar to smooth paste
- Heat 2 tbsp oil in heavy pot over medium-high flame
- Brown parboiled meat in batches 8-10 min per batch (develop crust)
- Remove meat, set aside
- Add remaining 2 tbsp oil to pot
- Sauté onions 6-8 min until deep golden brown
- Add ground masala paste, cook 6 min on medium heat until oil separates
- Add remaining 75ml vinegar, cook 2 min
- Pour in tamarind liquid (strained), stir well
- Return meat to pot, mix thoroughly (4 min)
- Add reserved broth, water, salt, jaggery, sugar, curry leaves
- Bring to boil, then reduce heat to low
- Cover tightly, simmer 50-60 min stirring every 15 min (meat becomes very tender, sauce reduces and thickens)
- Cook uncovered final 10 min if sauce needs thickening
- Reheats beautifully, better after 3-4 days
