👩‍🍳 How to make Goan Mutton Sorpotel

  1. In salted water (2 tsp salt), parboil mutton meat and liver together 30-35 min until partially cooked
  2. Drain well, reserve 300ml cooking broth
  3. Dry-toast all spices individually (2 min each): Kashmiri chillies, Byadagi chillies, peppercorns, cinnamon, cloves, cumin, coriander
  4. Cool completely, grind all to coarse powder
  5. Soak tamarind in hot water 30 min, squeeze and strain (save liquid)
  6. Blend spice powder with garlic, ginger, and 100ml vinegar to smooth paste
  7. Heat 2 tbsp oil in heavy pot over medium-high flame
  8. Brown parboiled meat in batches 8-10 min per batch (develop crust)
  9. Remove meat, set aside
  10. Add remaining 2 tbsp oil to pot
  11. Sauté onions 6-8 min until deep golden brown
  12. Add ground masala paste, cook 6 min on medium heat until oil separates
  13. Add remaining 75ml vinegar, cook 2 min
  14. Pour in tamarind liquid (strained), stir well
  15. Return meat to pot, mix thoroughly (4 min)
  16. Add reserved broth, water, salt, jaggery, sugar, curry leaves
  17. Bring to boil, then reduce heat to low
  18. Cover tightly, simmer 50-60 min stirring every 15 min (meat becomes very tender, sauce reduces and thickens)
  19. Cook uncovered final 10 min if sauce needs thickening
  20. Reheats beautifully, better after 3-4 days
