👩‍🍳 How to make Goan Kolambi

  1. Heat oil in wide pan over medium flame
  2. Add cumin seeds, let them pop (15-20 seconds)
  3. Add ginger, garlic, green chillies, cook 1-2 min until fragrant
  4. Add onions, sauté 5-6 min until translucent and soft
  5. Add tomatoes, cook 3-4 min until soft
  6. Sprinkle Kashmiri chilli powder, coriander powder, turmeric, black pepper powder
  7. Stir well, cook 2 min until spices bloom
  8. Pour in water, bring to simmer (2 min)
  9. Add curry leaves, cilantro
  10. Gently add prawns, stir carefully (do not break)
  11. Cook 3-4 min until prawns just turn pink
  12. Pour coconut milk slowly while stirring gently (2 min)
  13. Simmer 5-8 min until sauce thickens slightly and prawns are opaque
  14. Squeeze lemon juice, adjust salt
  15. Cook final 1-2 min
