👩🍳 How to make Goan Fish Masala Fry
- Heat 2.5 tbsp oil in wide pan over medium-high flame
- Sauté onions 5-6 min until golden brown
- Add ginger, garlic, cook 1-2 min until fragrant
- Add tomatoes, cook 3-4 min until soft
- Sprinkle Kashmiri chilli powder, coriander powder, turmeric, black pepper
- Stir well, cook 2 min until spices are fragrant
- Pour in water, add curry leaves, salt
- Bring to gentle boil (3-4 min)
- Add green chillies
- Carefully slide fish fillets into masala, don't stir aggressively
- Cook 8-10 min on medium heat until fish is opaque and flakes easily (watch: fillets should not be submerged, sauce should come halfway up)
- In separate small pan, heat remaining 2 tbsp oil over medium-high flame
- Heat oil is poured over fish (tempering style)
- Squeeze lemon juice over fish
- Sprinkle cilantro leaves
- Serve immediately
