👩‍🍳 How to make Goan Fish Masala Fry

  1. Heat 2.5 tbsp oil in wide pan over medium-high flame
  2. Sauté onions 5-6 min until golden brown
  3. Add ginger, garlic, cook 1-2 min until fragrant
  4. Add tomatoes, cook 3-4 min until soft
  5. Sprinkle Kashmiri chilli powder, coriander powder, turmeric, black pepper
  6. Stir well, cook 2 min until spices are fragrant
  7. Pour in water, add curry leaves, salt
  8. Bring to gentle boil (3-4 min)
  9. Add green chillies
  10. Carefully slide fish fillets into masala, don't stir aggressively
  11. Cook 8-10 min on medium heat until fish is opaque and flakes easily (watch: fillets should not be submerged, sauce should come halfway up)
  12. In separate small pan, heat remaining 2 tbsp oil over medium-high flame
  13. Heat oil is poured over fish (tempering style)
  14. Squeeze lemon juice over fish
  15. Sprinkle cilantro leaves
  16. Serve immediately
