👩‍🍳 How to make Goan Fish Curry

  1. Grind coconut with cumin, coriander powder, ginger, garlic, and 100ml water to smooth paste (5 min blending)
  2. Heat oil in wide pan over medium flame
  3. Sauté onions 3-4 min until translucent
  4. Add tomatoes, cook 2 min until slightly soft
  5. Add green chillies, curry leaves
  6. Pour in ground masala, cook 5 min on medium heat, stirring constantly until oil separates (watch for fragrance change)
  7. Add Kashmiri chilli powder, turmeric, black pepper powder, mix well (2 min)
  8. Pour in water and tamarind concentrate, bring to gentle simmer (5 min)
  9. Gently slide fish steaks into curry, don't stir aggressively
  10. Add salt, lower heat to medium-low
  11. Pour in coconut milk slowly while stirring gently
  12. Cover partially, simmer 15-18 min until fish is opaque and flakes easily (visual: when fork easily separates meat)
