- Beat eggs (2 mins, no heat): Whisk eggs with salt until frothy and uniform in colour.
- Fry aromatics (4 mins, medium heat): Heat coconut oil. Add onions, garlic — sauté until soft and golden. Add green chillies, tomatoes. Cook until tomatoes break down — 3 mins.
- Add spices (1 min, medium heat): Add turmeric, chilli powder. Fry 1 min until fragrant and oil turns orange-red.
- Scramble eggs (4 mins, low-medium heat): Pour in beaten eggs. Do not stir immediately — wait 30 seconds, then gently fold with spatula. Continue folding slowly — eggs should form large, soft, creamy curds. Remove from heat while still slightly wet as they continue cooking.
- Finish: Add garam masala and coriander. Serve hot with poi or bread.
