👩🍳 How to make Goan Crab Masala Fry
- Heat 3 tbsp oil in large wide pan over medium-high flame
- Sauté onions 6-7 min until golden brown (watch carefully)
- Add ginger, garlic, cook 1-2 min until fragrant
- Add tomatoes, cook 3-4 min until soft
- Sprinkle Kashmiri chilli powder, coriander powder, turmeric, black pepper
- Stir well, cook 2-3 min until spices are deep-colored and fragrant
- Add crab pieces, mix well with masala (4 min)
- Pour in water, salt, curry leaves, green chillies
- Cover pan, bring to boil (5 min)
- Lower heat to medium, uncover
- Simmer 25-30 min stirring occasionally (crab shells will darken, meat becomes tender)
- When sauce reduces to thick consistency and clings to crab pieces
- In small pan, heat remaining 2 tbsp oil over medium-high until hot and shimmering
- Pour hot oil over cooked crab (tempering style)
- Squeeze lemon juice, sprinkle cilantro
- Stir gently to combine
