👩‍🍳 How to make Goan Crab Masala Fry

  1. Heat 3 tbsp oil in large wide pan over medium-high flame
  2. Sauté onions 6-7 min until golden brown (watch carefully)
  3. Add ginger, garlic, cook 1-2 min until fragrant
  4. Add tomatoes, cook 3-4 min until soft
  5. Sprinkle Kashmiri chilli powder, coriander powder, turmeric, black pepper
  6. Stir well, cook 2-3 min until spices are deep-colored and fragrant
  7. Add crab pieces, mix well with masala (4 min)
  8. Pour in water, salt, curry leaves, green chillies
  9. Cover pan, bring to boil (5 min)
  10. Lower heat to medium, uncover
  11. Simmer 25-30 min stirring occasionally (crab shells will darken, meat becomes tender)
  12. When sauce reduces to thick consistency and clings to crab pieces
  13. In small pan, heat remaining 2 tbsp oil over medium-high until hot and shimmering
  14. Pour hot oil over cooked crab (tempering style)
  15. Squeeze lemon juice, sprinkle cilantro
  16. Stir gently to combine
