👩‍🍳 How to make Goan Chicken Dum

  1. Heat oil in heavy pot over medium flame
  2. Add cumin seeds, let pop (15 seconds)
  3. Sauté onions 4-5 min until golden
  4. Add ginger, garlic, cook 1 min
  5. Add tomatoes, cook 2-3 min until soft
  6. Add chicken pieces, mix well (3 min)
  7. Sprinkle all spice powders, mix well (2 min)
  8. Add water, salt, curry leaves, green chillies, grated coconut
  9. Bring to boil, cover tightly with parchment paper first, then lid
  10. Reduce heat to low, cook (dum) 35-40 min without opening lid
  11. Chicken should be very tender, cooking in trapped steam
  12. After 35 min, carefully open lid (watch for steam), check if meat is falling off bone
  13. Slowly add coconut milk, stir gently (2-3 min)
  14. Cook uncovered final 8-10 min if sauce needs thickening
  15. Squeeze lemon juice, sprinkle cilantro
