👩🍳 How to make Goan Chicken Dum
- Heat oil in heavy pot over medium flame
- Add cumin seeds, let pop (15 seconds)
- Sauté onions 4-5 min until golden
- Add ginger, garlic, cook 1 min
- Add tomatoes, cook 2-3 min until soft
- Add chicken pieces, mix well (3 min)
- Sprinkle all spice powders, mix well (2 min)
- Add water, salt, curry leaves, green chillies, grated coconut
- Bring to boil, cover tightly with parchment paper first, then lid
- Reduce heat to low, cook (dum) 35-40 min without opening lid
- Chicken should be very tender, cooking in trapped steam
- After 35 min, carefully open lid (watch for steam), check if meat is falling off bone
- Slowly add coconut milk, stir gently (2-3 min)
- Cook uncovered final 8-10 min if sauce needs thickening
- Squeeze lemon juice, sprinkle cilantro
