👩🍳 How to make Goan Chicken Cafreal
- In blender, combine cilantro, mint, green chillies, garlic, ginger, coconut, 25ml water
- Blend to smooth paste (texture should be creamy paste)
- Add cumin seeds, black pepper powder, salt, lemon juice, 1 tbsp oil
- Blend briefly to combine (30 seconds)
- Pat chicken pieces dry
- Rub green masala all over chicken pieces, inside and out
- Marinate minimum 30 min (up to 4 hours for deeper flavor)
- Heat 2.5 tbsp oil in wide pan over medium-high flame
- Sauté onion slices 3-4 min until golden, remove and set aside
- In same oil, place marinated chicken pieces (don't crowd pan, work in batches if necessary)
- Cook 5-6 min on each side on medium-high heat until skin is brown and crispy
- Lower heat to medium, cover pan
- Cook 20-25 min until chicken is very tender and cooked through (meat falls off bone)
- Stir occasionally to prevent sticking
- Return onions to pan in final 2-3 min
- Cook uncovered final 3-4 min if sauce needs to reduce
- Final texture: green herbs coat chicken, sauce should be thick enough to cling
