👩‍🍳 How to make Goan Chicken Cafreal

  1. In blender, combine cilantro, mint, green chillies, garlic, ginger, coconut, 25ml water
  2. Blend to smooth paste (texture should be creamy paste)
  3. Add cumin seeds, black pepper powder, salt, lemon juice, 1 tbsp oil
  4. Blend briefly to combine (30 seconds)
  5. Pat chicken pieces dry
  6. Rub green masala all over chicken pieces, inside and out
  7. Marinate minimum 30 min (up to 4 hours for deeper flavor)
  8. Heat 2.5 tbsp oil in wide pan over medium-high flame
  9. Sauté onion slices 3-4 min until golden, remove and set aside
  10. In same oil, place marinated chicken pieces (don't crowd pan, work in batches if necessary)
  11. Cook 5-6 min on each side on medium-high heat until skin is brown and crispy
  12. Lower heat to medium, cover pan
  13. Cook 20-25 min until chicken is very tender and cooked through (meat falls off bone)
  14. Stir occasionally to prevent sticking
  15. Return onions to pan in final 2-3 min
  16. Cook uncovered final 3-4 min if sauce needs to reduce
  17. Final texture: green herbs coat chicken, sauce should be thick enough to cling
