  1. Mash bananas (3 mins, no heat): Mash ripe bananas thoroughly until smooth.
  2. Make batter (3 mins, no heat): Combine mashed banana, rice flour, jaggery, cardamom, and salt. Add just enough water to make thick dropping batter.
  3. Fry (3 mins each batch, medium heat): Heat oil. Drop spoonfuls of batter into hot oil. Fry until golden-brown on all sides — fritters should be crisp outside, soft inside.
  4. Drain: Drain on paper towels. Serve warm.
