👩🍳 How to make Goan Bhakri
- Combine cornmeal, turmeric powder, red chilli powder, salt, cumin seeds in bowl
- Add 1.5 tbsp ghee, rub with fingertips (1-2 min)
- Slowly add hot water while mixing with hand (dough should come together but be slightly grainy due to cornmeal nature)
- Knead gently 2-3 min (do not overwork; cornmeal dough is more crumbly than wheat flour dough)
- Rest 10 min
- Divide into 8 equal portions, roll into balls
- Heat cast iron griddle or tava over medium-high flame
- Flatten one ball between parchment papers or wet hands into circular bhakri (approximately 6-inch diameter, quarter-inch thick)
- Place on hot griddle, cook 2-3 min until light brown spots appear
- Flip, cook other side 2-3 min (spots should be light brown, not black)
- Brush with remaining ghee
- Cook until edges start to lift slightly, indicating it's cooked through (total 5-6 min)
- Repeat with remaining dough
- Serve hot or store in airtight container
