👩‍🍳 How to make Goan Bhakri

  1. Combine cornmeal, turmeric powder, red chilli powder, salt, cumin seeds in bowl
  2. Add 1.5 tbsp ghee, rub with fingertips (1-2 min)
  3. Slowly add hot water while mixing with hand (dough should come together but be slightly grainy due to cornmeal nature)
  4. Knead gently 2-3 min (do not overwork; cornmeal dough is more crumbly than wheat flour dough)
  5. Rest 10 min
  6. Divide into 8 equal portions, roll into balls
  7. Heat cast iron griddle or tava over medium-high flame
  8. Flatten one ball between parchment papers or wet hands into circular bhakri (approximately 6-inch diameter, quarter-inch thick)
  9. Place on hot griddle, cook 2-3 min until light brown spots appear
  10. Flip, cook other side 2-3 min (spots should be light brown, not black)
  11. Brush with remaining ghee
  12. Cook until edges start to lift slightly, indicating it's cooked through (total 5-6 min)
  13. Repeat with remaining dough
  14. Serve hot or store in airtight container
