  1. Grind batter (8 mins, no heat): Blend soaked rice, grated coconut, and cooked rice with water to very smooth batter — smoother than regular dosa batter.
  2. Ferment (8–10 hrs, no heat): Add dissolved yeast and sugar. Mix, cover, ferment overnight until batter rises slightly.
  3. Serve: With coconut milk, vegetable curry, or egg curry.
