  1. Make prawn sukha (15 mins, medium heat): Dry roast Goan spices. Grind with coconut. Fry onion, add masala, add cleaned dried prawns. Cook dry until prawns are coated and fragrant.
  2. Prepare sol kadhi: Fresh kokum and coconut milk (see recipe #45).
  3. Serve: Poi with prawn sukha and sol kadhi — the cooling kadhi contrasts with the spiced prawns.
