👩‍🍳 How to make Coconut Milk Kanji

  1. Wash rice (2 mins, no heat): Rinse rice 3–4 times until water runs mostly clear.
  2. Add coconut milk (5 mins, low heat): Stir in thick coconut milk and salt. Do not boil vigorously after adding coconut milk or it will curdle. Simmer gently 3–4 mins, stirring.
  3. Serve: Drizzle coconut oil on top. Serve with pickled green chilli, dry fish, or papad.
