  1. Toast bread (3 mins, medium heat): Butter bread slices on both sides. Toast in pan or under grill until golden and crisp.
  2. Warm balchao (3 mins, low heat): Heat balchao gently in small pan with 1 tbsp water — it should be thick, deep red, and intensely aromatic.
  3. Assemble: Spread warm balchao generously on toast. Top with raw sliced onion rings and coriander.
  4. Serve: Eat immediately while toast is crisp.
