  1. Heat oil to 160°C; add mustard seeds, urad dal (40 sec).
  2. Add green chillies; sauté 20 sec.
  3. Add onions, potatoes; fry 1 min.
  4. Add carrots, peas; fry 1 min.
  5. Add turmeric, salt, poha; toss gently (1 min, 160°C).
  6. Add peanuts, lemon juice; mix well.
  7. Color pale gold with vegetables, texture light and fluffy, aroma tangy-spiced.
