- Heat oil to 170°C; add onions, fry until golden (1.5 min).
- Add ginger-garlic, green chillies; sauté 30 sec.
- Add goda masala, turmeric; fry 30 sec.
- Add potatoes, eggplant, sweet potato; stir-fry 2 min.
- Add green beans, peas, salt, jaggery, water; cook 15 min until vegetables soft.
- Stir occasionally; color should be deep brown-gold.
- Color brown-gold, vegetables soft and coated, aroma aromatic-spiced.
