  1. Knead flour, salt, oil, water into soft dough (5 min); rest 10 min.
  2. Squeeze water from spinach.
  3. Heat oil; fry onions until golden (1.5 min, 170°C).
  4. Add ginger, green chillies; sauté 20 sec.
  5. Add spinach, salt; cook 1 min.
  6. Cool.
  7. Divide dough into 4 balls; flatten.
  8. Place spinach mixture on half; fold, seal edges.
  9. Roll gently to 5mm.
  10. Cook on tawa at 180°C: 2 min per side until golden.
  11. Color bronze with green visible, texture flaky, aroma herbal.
