👩‍🍳 How to make Shakarpare

  1. Mix flour, salt; add ghee, water; knead into stiff dough (5 min).
  2. Roll thin (3mm); cut into 3cm diamond shapes.
  3. Heat oil to 170°C; fry pieces until golden (1 min per batch, 170°C).
  4. Drain on paper.
  5. Heat jaggery with cardamom in pan on low (140°C) for 3 min until melted.
  6. Dip warm fried pieces into jaggery; spread on greased plate.
  7. Cool 10 min; break into pieces.
  8. Color golden-brown, texture crunchy and brittle, aroma sweet-cardamom.
