👩🍳 How to make Shakarpare
- Mix flour, salt; add ghee, water; knead into stiff dough (5 min).
- Roll thin (3mm); cut into 3cm diamond shapes.
- Heat oil to 170°C; fry pieces until golden (1 min per batch, 170°C).
- Drain on paper.
- Heat jaggery with cardamom in pan on low (140°C) for 3 min until melted.
- Dip warm fried pieces into jaggery; spread on greased plate.
- Cool 10 min; break into pieces.
- Color golden-brown, texture crunchy and brittle, aroma sweet-cardamom.
