- Heat oil to 160°C; add mustard seeds, urad dal (40 sec).
- Add curry leaves, ginger, green chillies; sauté 20 sec.
- Add onions; fry until soft (1.5 min, 170°C).
- Add turmeric, salt, water; bring to boil.
- Slowly add semolina, stirring constantly.
- Reduce heat; cook 5 min until liquid absorbed.
- Add lemon juice; mix well.
- Color golden, texture fluffy, aroma lemon-spiced.
