👩‍🍳 How to make Prawn Balchao

  1. Soak chillies 5 min; blend with ginger, garlic, cumin, turmeric, 100ml vinegar to paste.
  2. Heat oil to 170°C; add onions, fry until golden (2 min).
  3. Add green chillies, curry leaves; sauté 30 sec.
  4. Add prawns; stir-fry 3 min until pink and cooked.
  5. Add chilli paste; cook 4 min, stirring.
  6. Add remaining vinegar, salt; cook 2 min.
  7. Cool; store in glass jar with oil floated on top.
  8. Color reddish-brown, prawns cooked, flavor hot-sour-spiced.
