👩🍳 How to make Prawn Balchao
- Soak chillies 5 min; blend with ginger, garlic, cumin, turmeric, 100ml vinegar to paste.
- Heat oil to 170°C; add onions, fry until golden (2 min).
- Add green chillies, curry leaves; sauté 30 sec.
- Add prawns; stir-fry 3 min until pink and cooked.
- Add chilli paste; cook 4 min, stirring.
- Add remaining vinegar, salt; cook 2 min.
- Cool; store in glass jar with oil floated on top.
- Color reddish-brown, prawns cooked, flavor hot-sour-spiced.
