- Heat oil to 170°C; add mustard seeds, chana dal (40 sec).
- Add curry leaves, green chillies, peanuts; fry 2 min until peanuts cooked.
- Add cashews; fry 1 min until golden.
- Add turmeric, chilli powder; fry 30 sec.
- Add poha; toss constantly (2 min, 160°C).
- Remove from heat; add salt, lemon juice; toss well.
- Spread on plate to cool.
- Color golden with roasted bits, texture crunchy throughout, aroma spiced-nutty.
