- Heat oil to 160°C; add mustard seeds (40 sec).
- Add curry leaves, green chillies; sauté 20 sec.
- Add onions; fry until soft (1.5 min, 170°C).
- Add turmeric, chilli powder; fry 20 sec.
- Add neem leaves, salt; cook 5 min until well combined.
- Add lemon juice; mix well.
- Color brown-gold with green leaves, aroma bitter-spiced.
