  1. Heat oil to 160°C; add mustard seeds (40 sec).
  2. Add curry leaves, green chillies; sauté 20 sec.
  3. Add onions; fry until soft (1.5 min, 170°C).
  4. Add turmeric, chilli powder; fry 20 sec.
  5. Add neem leaves, salt; cook 5 min until well combined.
  6. Add lemon juice; mix well.
  7. Color brown-gold with green leaves, aroma bitter-spiced.
