👩‍🍳 How to make Meen Upperi

  1. Mix flour, salt; add oil, water; knead into smooth dough (5 min).
  2. Rest 10 min.
  3. Heat oil; fry onions until golden (1.5 min, 170°C).
  4. Add ginger, green chillies, fish, turmeric; cook 4 min until dry.
  5. Cool slightly.
  6. Divide dough into 4 balls.
  7. Roll thin (2mm); spread filling evenly.
  8. Roll up tightly; coil, press flat.
  9. Cook on tawa at 180°C for 3 min per side until golden.
  10. Color bronze-gold, texture flaky, fish aroma evident.
