  1. Heat oil; temper mustard seeds, urad dal, chana dal (40 sec, 160°C).
  2. Add curry leaves, green chillies; sauté 20 sec.
  3. Add onions, turmeric; fry until golden (2 min, 170°C).
  4. Add fish; stir-fry 1 min.
  5. Pour water, bring to boil.
  6. Slowly add semolina, stirring continuously (1 min) to avoid lumps.
  7. Reduce heat, cover; cook 8 min until liquid absorbed.
  8. Fluff; color golden, texture crumbly, fish flakes visible.
