  1. Heat oil to 180°C; add onions, fry until golden (1.5 min).
  2. Add ginger, green chillies; sauté 30 sec.
  3. Add fish; stir-fry 1 min until cooked.
  4. Add rice, turmeric, soy sauce; toss constantly (3 min, 180°C).
  5. Add salt, coriander; mix well.
  6. Color white-golden with fish flecks, each grain separate, aroma umami-spiced.
