- Heat oil to 170°C; add mustard seeds (40 sec).
- Add curry leaves, green chillies; sauté 20 sec.
- Add onions; fry until golden (2 min, 170°C).
- Add ginger-garlic paste; sauté 1 min.
- Add tomatoes, turmeric, chilli powder, coriander; cook 3 min until tomatoes soft.
- Add fish, salt; cook 4 min until fish opaque.
- Add coconut milk; simmer 12 min until fish cooked and sauce coats fish.
- Color reddish-brown, fish flakes easily, sauce thick and aromatic.
- Serve with cooked rice.
