- Heat ghee to 150°C; add almonds, cashews; fry until golden (1 min).
- Remove; set aside.
- Add grated gourd to same ghee; cook 10 min, stirring often, until moisture evaporates.
- Add jaggery, milk; cook 5 min until jaggery dissolves.
- Add cardamom, nutmeg; mix well.
- Add fried nuts; cook 1 min.
- Halwa should be semi-solid when warm.
- Color golden-brown, texture pudding-like, aroma sweet-nutty.
