👩🍳 How to make Khaman
- Mix besan, curd, water to smooth batter.
- Add ginger-garlic, green chillies, turmeric, hing, salt; fold in gently.
- Pour into greased tray (20x20cm); sprinkle curry leaves.
- Steam at 100°C for 8 min until set.
- Remove; cool 2 min.
- Heat oil; add mustard seeds (40 sec, 150°C); pour over khaman.
- Cut into squares.
- Color pale yellow, texture fluffy and spongy, aroma besan-sweet.
